Packaging – Oxygen Absorbers
Oxygen absorbers are a small packet of oxygen remover material used to prolong the shelf life of food. They are used in food packaging to prevent food colour change, to stop oils in foods from becoming rancid, and also prevent the growth of oxygen-using aerobic microorganisms such as fungi. With biltong products they are absolutely essential in keeping the dreaded mould at bay. Once a product has been sealed with the oxygen absorber inside, the absorption process takes several hours to complete. At the end of this period, the level of oxygen within the packaging has been reduced from the 21% normally present in air to less than 0.01%. The absorber continues to work both on the oxygen present within the food itself and on any which permeates through the packaging until the food is used. As well as preventing bacterial growth the O2 absorber eliminates the oxidation which can adversely affect the flavour, odour, and colour of a product.
A 20cc sachet is required for our small Mylar bags (250ml) for packaging up to 100g sliced biltong or droëwors products with air squeezed out by hand and heat sealed.
A 200cc sachet is required for our large Mylar bags (750ml) for packaging 250g (or up to 500g) biltong or droëwors products with air squeezed out and heat sealed.
A 50cc sachet is required for our Plastic Vacuum sealer bags bags (300x200mm) for packaging 250g sliced biltong or droëwors products and semi vacuum packaged.
Two 50cc sachets are required for our Plastic Vacuum sealer bags bags (300x200mm) for packaging 500g sliced biltong or droëwors products and semi vacuum packaged.

Packaging – Plastic VacPack and Mylar Foil Ziplock bags
Mylar Window Pouches.. Stand up Mylar window pouches with Ziplock and space to heat seal. Foodsafe clear plastic one side and foil other side. Must be used with Oxygen Absorbers for long term shelf life. (See our other products for info on these absorbers).
250 ml is 110 x 185mm and is suitable to package up to 100g sliced biltong or droëwors – these are now strong paper with plastic instead of thin foil and plastic.
750 ml is 160 x 270mm and is suitable to package up to 250g sliced or stick biltong or droëwors
Plastic Vacuum Sealer bags – high quality embossed / channeled bags to suit most DIY vacuum sealer machines. For long term storage and due to the fact that sliced biltong can’t be vac-packaged you will need to use Oxygen Absorbers and suck out as much air as possible then heat seal. (See our other products for info on these absorbers.)

If you are looking for MSG and GLUTEN FREE spice then all our Boerewors / Droewors spices are for you. A subtle blend of plain spices with a coriander twist gives a great it an original Southern African taste. Packed in 200g packs that will make about 8kg of sausage. Available in a few flavours. We only sell this for DIY purposes and not for commercial manufacturers.
Zimbeze Spices – Biltong
Biltong Spice … We also sell all our own brand Zimbeze Spice mix variations that we use in our products. Our Biltong ready mixed spices in various flavours. All our spices with the exception of SAFARI – PLAIN are MSG and GLUTEN FREE. A subtle blend of plain spices with a coriander base gives a great tasty morsel of biltong. We also add chilli powder and flakes to this plain mix to make a delightful tasting spicy medium heat spice. Our Safari flavour with extra additives has a bit more depth and is a great Traditional Southern African taste. Packed in 450g packs that is enough to spice up about 12kg of wet meat. We only sell this for DIY purposes and not for commercial manufacturers.

Biltong Spice – Imported
Biltong Spice – Crown National Safari – Imported from SouthAfrica. Traditional South African Biltong Spice/Seasoning is one of Africa’s favourite biltong spices. Also ideal as a BBQ / Braai spice. We import the spice in 2kg packs, so we personally make up the smaller packs… you will always get a bit extra. The bigger packs will come in their own bags and the smaller packs will come in a clear vacuum packed bag together with instructions. Spice usage is approx 35-45g per kg meat.

We make a plastic DIY Biltong dryer box complete with 220v fan & light, started pack of spice, hooks and full instructions so people can make themselves a few kilos a time in their own home. You can put it in your garage or shed and its very cheap to run. It will only cost about a pound in electricity per batch. Ideal for making small batches of about 1.5 kg dried biltong or droewors each time. You can be nibbling on biltong within 2 days if cut thinly. New to our product line are delicious Bacon Bites – some are Sweet and some are Sweet Chilli… Streaky and or Back Bacon spiced with our plain biltong spices and marinated in a honey and chutney mix, flavoured with soy and worchester sauce. Gently de-hydrated (almost like making Jerky) producing a delicious dried bacon rasher with a sweet slightly salty taste. The addition of the chilli really has produced a fantastic tasting product.

Chilli-Bites / Stokkies
Chilli Bites / Stokkies are similar to Biltong but are a thinly cut sliver of spiced fairly dry biltong. These have a different marinade mixture to give it a slight bite and a different taste to biltong… Carefully cut and marinated for over 24 hours to let the spices and marinade be absorbed into the meat strips. All the Stokkies have a unique taste from the added Worcester and soy sauce, giving it a slightly different taste from the normal biltong. To complement the Plain product, our delicious tasty spicy chilli bites have chilli powder added to the spice mix and a HOT variation is also available. A real hit with everyone who loves a bit of spicy chilli. There is NO MSG or Gluten used in the recipe for these products.

Our Boerewors Burger Patties are made with the same ingredients as Boerewors sausage above, but made as a burger instead. Each one is a delicious Quarter Pounder patty (approx 125g ) – just meats and spices – no binders or fillers. Like our Boerewors they have no added MSG, FILLERS, RUSK or GLUTEN so are also Ideal for Banting Dieters (LCHF)
Presently we are only making a plain version. Packaged 4 patties to a 500g (approx) pack. Packs are frozen vacuum packaged and sent by next day courier.
For obvious reasons these are non-returnable
Our plain Boerewors has just been awarded a Great Taste 1 star rating and we use the same recipe for the burgers so is as delicious as the boerewors.
Boerewors (500g approx.)
Boerewors Is a very Traditional spiced South African Farmers Sausage. Boerewors to South Africa is just like Germany’s Bratwurst is their traditional sausage. A subtle blend of herbs and spices (which include: salt, black pepper, nutmeg, roast coriander, allspice, and cloves) which when added to coarsley minced beef, pork and lamb give our Boerewors the best South African taste around. Great for a BBQ or in proper African terms – a BRAAI. We have a traditional recipe going back many years and our customers LOVE the product.
Our Boerewors has NO MSG, FILLERS, RUSK or GLUTEN added and is also Ideal for Banting Dieters (LCHF) as there is no added sugar or bad additives, with the exception of our cheese and chutney variants which have milk and sugars. Flavours available: plain, garlic, chilli, chutney, cheese.

Boerewors is very versatile – you can either Braai (BBQ) it, grill it or fry it. It is also delicious on a roll and many market stalls sell it like this. Don’t pierce your Boerewors before or during cooking and cook it over a low to medium heat to retain as much moisture as possible.
Packed in 500g (approx) frozen packs, vacuum packaged and sent by next day courier. For obvious reasons Boerewors is non-returnable.

Banting Droëwors (LCHF diet)

Banting Droëwors – Dried lean beef sausage with a selection of spices – contains about 5%-10% fat. Our spices are mixed by ourselves and comprise salt, pepper and roasted coriander, nutmeg, clove and allspice without any added sugar. Available in Plain, Chilli and Garlic flavours.. (Chutney flavour also available which does have some sugar in the process of manufacturing the chutney).
Droëwors / Dry Wors
Droëwors (AKA Beer Sticks) are spiced air dried minced Beef sausage. The spices are different to that which is used for biltong. There is NO MSG or Gluten used in any of our Droewors. The sausage dries to a snap-stick dryness and is delicious. Various flavours are available, from our most popular own plain flavour, through to our tasty garlic or chutney versions and not forgetting our delicious spicy mild to medium chilli. Delicious when washed down with a glass of wine or a cold beer watching the sunset – (when we get a bit of clear sky!!)
Approx 250g beef is used to make 100g dried product and is approx 45% protein 360 kCal per 100g dry product.
Our Droëwors is all semi vac-packed and sealed in either Mylar or strong plastic bags in an oxygen free environment.
Banting Biltong (LCHF)
Banting Biltong – Low Carb High Fat…. Perfect for the dieters on the LCHF diet.
Banting biltong is quite / very fatty and is similar to our normal plain biltong but without any added sugar, Gluten or MSG. Our base spices are mixed by ourselves and comprise salt, pepper and roasted coriander, then the addition of any required flavouring. Available in fatty sliced Plain or Chilli. (Very fatty option is not always available so we will supply as fatty as possible).
Biltong – Pocket Packs
Biltong – Pocket Packs.. These are packaged in convenient “Pocket Size” zip-lock packets which are ideal for sportsmen and women to take with them on their travels. Full of protein and very good for recovery. These Pocket Packs are great for “Pubs and Clubs” to have at the bar for a quick snack over a pint.. Plain and Chilli have no added MSG or GLUTEN. A real winner all round!!

Biltong – Bulk Packs 250g
Biltong is a traditional Southern African spiced and air-dried snack made using beef steaks, very high in protein and low in saturated fats. It is fast becoming a major food snack for sportsmen and women as it’s extremely good for a quick muscle recovery from exercise, be it athletics, cycling, canoeing, hiking etc. etc. We only use top quality British Beef silverside. There is NO MSG or Gluten added in our traditional Plain or Chilli biltong. Our Safari range has a small amount of imported South African “Safari” spice added to our natural spices to give it a slightly deeper South African taste and does contain MSG. We mix our own base spices and comprise salt, pepper and roasted coriander and sugar, then the addition of the required flavouring.
Approx 220g beef is used to make 100g dried product and is approx 55% protein 255 kCal per 100g dry product. (sourced from the internet). Fatty option is not always available so we will supply as fatty as possible.
Semi vac-packed and sealed in either Mylar or food safe strong plastic bags in an oxygen-free environment.
