Gavin & Trish Conway were both from farming stock, born and bred Rhodesians. Gavin’s father was a real connoisseur Biltong maker and taught him well. From a very young age, Gavin was always out hunting on the farm with his .22 rifle and in later years used to hunt with his Father on a friends’ game ranch. All the meat was used for making Biltong – so the art of Biltong making is in his blood.
They immigrated to the UK in 2001 and settled in Macclesfield, Cheshire and was then restricted to making Biltong occasionally using beef joints when on special offer from the supermarkets. Over a few years it has now grown from a small hobby of making a few sticks for family and friends, to being a registered Biltong manufacturer business, using a wholesale butchery supplier and processing nearly 150 kilos of meat a week. Yet we are still small enough to give a very personal professional touch to all our products.
Here he is weighing spices to use on a batch of biltong.
Gavin’s Homemade Biltong was formally born in April 2014 and just over a year later was granted full Health and Safety / Hygiene approval for food manufacturing through the local Council.
Initially very plain spice mixes were formulated and tested and over a few months of modifications, the perfect recipes evolved. These recipes are now used to make the delicious Southern African Traditional tasting Biltong, Droëwors and Boerewors that we take pride in making ourselves. We have progressed from using a small homemade wooden box dryer, perched on top of boxes in the garage to using a fully equipped purpose built shed unit in the garden.
We use 100% British Beef, Pork and Lamb in our products and the combination of our spice mixes, along with our very personal homemade touch, results in the finest quality, high protein, rich, delicious Biltong and Droëwors snacks and scrumptious tasting juicy Boerewors.
All our products are fast becoming big sellers and sometimes find it hard to keep up with demand. We also try to accommodate our customer’s special requirements and make to order if requested. We can normally have these special orders posted out within a few days. We generally hold good stocks of all our products and post or courier out same or next day.
Our 2016 annual review/inspection by the Cheshire East Environmental Health Officer resulted in us being upgraded from 3* to a 5* Food Hygiene Rating which we still proud to have, as well as being an approved UK EC food processing business. We were awarded a great Taste Award for our plain Boerewors Sausage in 2017 – a really great feeling comes with this award.
